BEAR is a UK-based coffee house brand built around great coffee, laid-back hospitality and all-day social spaces.

With a growing estate and an offer spanning daytime, evening and events-led occasions, BEAR needed a menu strategy that could work harder commercially while staying true to the brand’s personality.

The Brief
Egg Soldiers was tasked with supporting Bear on a focused menu development project, creating a stronger food offer across Autumn, specials and Christmas.

The ambition was to improve menu performance, strengthen operational delivery and create more compelling reasons for guests to visit throughout the day and evening.

The project needed to balance creativity with commercial discipline, supporting food and drink GP targets while building dishes that were scalable, simple to execute and full of BEAR's energy.

  • Menu Strategy Across Dayparts
    We reviewed BEAR's existing offer, menu structure and trading ambitions, using sales mix, COGS and operational insight to shape the direction.

    The work helped define how the daytime and evening menus should function, with clearer menu architecture, dish mix and scheduling to support stronger trade across different guest occasions.
  • Seasonal and Daypart-Led Menu Development
    BEAR’s menu refresh was designed to give guests more reasons to visit, with a stronger focus on the lunch day part and more elevated dishes that could help drive a higher spend per head.

    Christmas became the standout opportunity. We helped BEAR innovate its festive offer with more compelling, occasion-led dishes that felt special for guests, simple for teams to execute, and commercially strong enough to support their big Christmas push.
  • Recipe Development and Implementation
    Egg Soldiers developed the agreed dishes through tastings, feedback and sign-off, creating practical recipes with ingredients, quantities, prep, cooking instructions and plating guidance.

    The work then moved into implementation, with in-site ingredient checks, final recipe adaptations and train-the-trainer support to help the BEAR team deliver the new menu consistently.

Following the main menu development project, Egg Soldiers continued to support BEAR with operational workstreams, including BOH process guides, recipe training materials, FOH reference cards, kitchen layout guidance and implementation support - helping the brand turn menu development into repeatable, scalable kitchen practice.
