Scaling Racecourse F&B for Speed, Consistency & All-Day Performance

Egg Soldiers partnered with Sodexo Live! to deliver a scalable food and beverage strategy across three Scottish racecourses, simplifying operations and improving performance across long, high-pressure trading days

Our Client
Hamilton Park, Musselburgh and Perth Racecourses are three of Scotland’s leading racing venues, each delivering high-volume food and beverage operations across busy event calendars and extended trading days.

While each site serves a distinct audience and race-day experience, all share the same operational challenge: delivering fast, consistent, high-quality food across fluctuating peaks in demand — from steady pre-race trade to intense intervals between races — while maintaining commercial performance throughout the day.
Scottish Racecourses
The Brief
Across all three racecourses, food and beverage needed to perform more consistently across long trading days, with demand fluctuating between steady flow and intense peak periods.

Speed of service and accuracy were critical, but without compromising quality or relevance across different race-day audiences.

Existing menus and food builds were creating unnecessary operational complexity. Variation across sites, inefficient service steps and unclear menu structures were slowing teams down and limiting throughput during key trading windows.

Our brief was to simplify and standardise the offer across all three venues improving pace, consistency and ease of execution — while working within existing infrastructure and without introducing additional concepts or capital investment.

The Result
We delivered a simplified, scalable food and beverage model across Hamilton Park, Musselburgh and Perth, designed to perform consistently under the pressure of race-day trading.

By reducing menu complexity and standardising builds, we enabled faster, more reliable service during peak periods.

We aligned menu architecture and operational approach across all three sites, creating a more consistent system that is easier to train, manage and execute. This reduced friction in day-to-day operations and improved team confidence during high-volume service.

By focusing on practical, infrastructure-led improvements, we helped ensure the food offer could sustain pace and quality across long trading days — supporting stronger throughput, improved guest experience and more consistent commercial performance.
