Food strategy and development for first international opening

Ole and Steen
With over 70 bakeries in Denmark, London was the first international opening for Ole and Steen.

We created the savoury food vision and menu architecture to add to the bakery offer, creating a full food solution for the London market.

Once the food vision was agreed, our work involved full development of all recipes and products to set GP margin targets, creating the supply chain, designing the kitchen area, operational design and team training.

With strong foundations in place, the business has grown quickly and opened 11 sites in the UK and gone on to open in New York.
