As Head of Food and Marketing, Toph led the innovation and menu development strategy at Leon for over four years – building the foundations for a scalable restaurant model and supporting the business as it grew from 7 to 40+ sites.

Key to success – a collaborative approach between Food, Ops and Brand:

> Product – developing a strong core menu (across all day-parts) that is full of recognisable, blockbuster dishes; allowing for constant market leading innovation to be regularly launched alongside

> Operations – creating a streamlined and focussed back-of-house model, allowing the business to regularly introduce new dishes, and scale at pace, without compromising on quality

> Brand – telling people who they are and what they do; sharing the brand's personality, values and reasons for being; creating brands within the brand; and sometimes just as simple as designing beautiful menu boards, giving clarity to customers.

Leon has used this platform to continue their impressive restaurant opening plan (around 60 in the UK) and 2 sites in US (Washington D.C) – and growing.
