Project Overview
The Lensbury Resort is an elegant, 4-star private members' hotel on the banks of the River Thames in Teddington with over 100 years of heritage and prestige.

Egg Soliders was brought in to lead on the development and launch of its first café lounge concept, The Dunbar, with the project including the honing of the concept vision, and the creation of a full food and drink proposition.

Concept Definition & Operational Planning
The project began with a series of creative workshops to build out on the initial private members' café vision.

These sessions allowed the team to co-create a defined F&B concept that meets the needs of its patrons, while also developing a clear operational model that aligns with The Lensbury's requirements and capacities.
Food & Menu Concept Development
The second stage of the project brought the development of the food and drink proposition, with our expert team creating full range recipes with optimised supply chains and clear costings, as well as leading on the sourcing of both crockery and packaging.

Our expert team also supported on the development of its FoH food counter and co-created aligned menu architecture with The Lensbury to fit across day parts.
Concept Launch & Support
Egg Soldiers spent a week live on site for the new Dunbar concept launch to help train chefs and BOH staff in the new processes, also delivering streamlined training materials.

The Lensbury Resort stakeholders told us they will use our process as the benchmark for the rest of the hotel as they continue to redevelop - a great compliment to all of us!
