Project Overview

Egg Soldiers was commissioned by P&O Cruises for two engaging projects.

The first project was to develop the menu and food offer for its new restaurant concept, 6th Street Diner - a classic American diner with a twist.

The concept, found aboard the Arvia, the largest ship on the British cruise market and the seventh-largest cruise ship in the world, was to offer an all-day dining experience centred around American comfort food favourites, with Egg Soldiers tasked with creating multiple menus across various day parts, from family-centric daytime offers to formal gala dinner menus for evening events.

Following this, Egg Soldiers was tasked with revamping P&O's main food offer, named Freedom Dining, with 800 new dishes developed for its fleet of vessels.

Our Approach
6th Street Diner:
Concept Definition & Food Vision
Egg Soldiers kicked off the 6th Street Diner project with a dedicated concept definition stage. This began with the team assessing the onboard operations aboard the Arvia to align with concept aspirations.

This assessment included the current food offer and various customer journeys in board the vessel for a complete picture of propositions, menu tactics, supply chain setups, guest experiences, and F&B capabilities.

This was then followed by a series of engaging workshops with the client to co-create a best-in-class menu vision that aligned with service offer guidelines, dovetailed with an immersive competitor tasting tour.
6th Street Diner:
Dish Recipes & Menu Development
With a defined food vision agreed with the client, Egg Soldiers began development of all dish recipes for the range of menus.

Over 50 dishes across four dedicated menus were developed, tasted across 3 different sessions with the client, with Egg Soldiers delivering completed product costings and supply chain specifications, while also recommending service styles and crockery.

Egg Soldiers supported the soft launch on-site, with a menu and dish performance review conducted with the team four weeks post-launch, which featured future menu development recommendations.
Freedom Dining:
Menu Modernisation & Future-Proofing
This second project saw Egg Soldiers take on the main dining room menu for P&O Cruises, namely to future-proof the concept by improving the food offer without increasing cost.

Alongside costs, we also looked at modernising dishes and the overall offer, with a macro/cuisines trend report and comprehensive competitor benchmarking analysis kickstarting our immersion & review phase.

Learnings from this phase fed into our new menu architecture and creation workshops, hosted by our award-winning team, with aim to co-create menu and dish plans across day parts.
Freedom Dining:
New Menu & Dish Development
Stemming from our workshops, Egg Soldiers began to bring the new menus to life with targeted dish development, modernising and expanding on current ranges with creative, trend-aligned offers designed to appeal across demographics and occasions.

We hosted culinary sessions with the P&O team to present, discuss and align on dishes, with 800 dishes developed around 14-day menu cycles.

Full menu outputs were presented at the close of the project, with day parts including lunch, dinner, supplementary dish additions, and 'celebration' occasions.
