Grosvenor Casinos partnered with Egg Soldiers to revamp and modernise the luxury food menus of its London-based casinos to align with customers' evolving expectations of a fine dining experience.

In the competitive world of casinos, where ambiance and customer experience play pivotal roles, our job was to facilitate a transformation in Grosvenor's higher end culinary offer through a strategic and segmented approach.

Our Approach
Phase 1: Creating a New Food Strategy
Our first phase focused on fully immersing in the London casinos in scope, as well as the overall Grosvenor Casino business, customer targets, operations and overall brand.

This coupled with a focussed analysis of local and direct competitors (both market and operational models) gave us the perfect foundations for a series of creative workshops with the client to co-create a new, future-focused F&B strategy, vision, guardrails and menu development roadmap.
Phase 2: Developing New Recipes
With the F&B strategy established, forming the basis of our project 'playbook', Egg Soldiers then moved into the development stage - the creation of bespoke menus for each venue, ranging from the classic-led to the more modern fusion approach.

We developed close to 100 new dishes for Grosvenor Casino's selected restaurant concepts, hosting several live dish tastings throughout the journey to ensure success, with the team delivering a comprehensive output pack featuring:

• Recipes with ingredient listings, recipe methods and final dish photo standards

• A 'dish matrix' containing the final co-created menu with dish names, descriptors and dietary indicators

• Recommended selling prices for each dish

• Crockery and cutlery recommendations list
Phase 3: Training & Launch Support
To round off this brilliant project, Egg Soldiers development chefs spend two weeks at each venue to lead the training of both BOH and FOH staff and the implementation of the new dishes and menu.
